Strawberry Shortcake Smoothie

Ever wish you could have dessert for breakfast? This smoothie is wonderful, and is as thick as you want it to be — simply start with 1/2 a cup of cold water and add more to get your desired thickness. I love that this recipe includes raw oats — a great source of fiber, and it fills you right up. This smoothie is truly a meal replacement, and it’s delicious to boot!


Strawberry Shortcake Smoothie

(adapted from Green Thickies)


  • ½ cup coconut milk (or other unsweetened non-dairy milk)
  • 1 cup ice cold water
  • 1 ½ cups strawberries
  • 2 tbs cashew pieces (preferably unsalted)
  • 1 tsp vanilla extract
  • ½ teaspoon cinnamon
  • Pinch of stevia or other sweetener
  • Optional: 1 cup of leafy greens (baby spinach or romaine hearts)
  • Optional: ½ cup raw oats
  • Optional: ¼ teaspoon nutmeg
