Blueberry Pie Smoothie

Today’s recipe is filling, filled with fiber, and delicious. The secret ingredient is the lemon zest. I’ve been experimenting with blueberry smoothies since I started blending healthy concoctions years ago, and I must tell you, I find them surprisingly difficult to work with. Blueberries are so full of fiber that, when blended, they become a thick, almost pudding/jello-like substance without a ton of flavor — not exactly sippable or fun to drink. Changing the quantity and adding in a citrus of some kind has always been my trick to a perfect blueberry smoothie. My usual go-to citrus has always been pineapple (mostly because that’s what I learned the first time I ever drank a blueberry smoothie I enjoyed it, but with this concoction, my goal was to keep the sugar low and the fiber high.

Paleo Blueberry Pie Smoothie

  • 1 cup frozen blueberries
  • ½ cup coconut milk
  • 1 scoop Hemp protein
  • fresh lemon zest, to taste
  • pinch of cinnamon
  • filtered water
