Vitamin C-itrus Smoothie

Today’s smoothie brings two bitter citrus fruits together into a sweet, refreshing blended beverage — grapefruit and kumquats. I had intended to use clementines instead of kumquats but they didn’t have any at the grocery store, and the kumquats were looking beautiful. The clementines were meant to balance out the sour of the grapefruit, but instead I went with two sours as an experiment. I liked it, but after bringing this concoction to smoothie club, the feedback I got was to add a pinch of stevia to it, so that’s included in today’s recipe. I do like it better with the pinch!

Vitamin C-itrus

  • Big fistful baby spinach
  • ½ a ruby red grapefruit
  • 4 kumquats (can sub for ½ orange if you can’t find)
  • ¼ banana
  • 4 frozen strawberries
  • Handful frozen raspberries
  • 2 tbs chia seeds
  • 2 cups water
  • ¼ cup coconut milk
  • Touch of stevia
