We’re back into the swing of smoothie club, and this year I’m focusing less on getting all the macronutrients (fat, carb, protein) into each formula and more on micronutrients (vitamins, minerals, phytonutrients). This blend is all about vitamin C and beta carotene. We’ve got some delicious citrus fruits, some carrots, and some peach in this blend, and for an early spring beverage, it’s perfect.
We’re rounding the corner of cold and flu season and into allergy time — if you want to be pessimist about it. 🙂 But either way, getting a big dose of vitamin C and antioxidants is a great way to ward off the demons of any season.
- 1 mandarin (or 2 cuties), peeled and chopped, seeds removed
- Juice from 1 lemon
- 2 carrots, peeled and chopped (or grated)
- 1 1/2 cup unsweetened almond milk
- 1 frozen peach (if you use fresh, throw in a few cubes of ice)
