This month’s smoothie was a joy to share. We saw some new faces at Smoothie Club at both Fairmont and Highland Hospitals, and we even had a new member purchase 4 drinks to share with his coworkers! Thanks Robbie! You’re awesome!
In light of the heat we’ve been having, I wanted to continue the light, refreshing trend we started last month with the Green Goddess Smoothie. Unfortunately, I didn’t realize when I wrote the recipe that lime prices are skyrocketing! I did see today that the prices have dropped back down by 42% this week though — refreshing news itself! Hopefully that will all get taken care of soon enough. I’ve heard quite a few stories of restaurants attempting to serve lemons with their Mexican fare — keep your lemons away from my tacos! There are too many great uses for limes in spring and summer cuisine where lemon simply won’t cut it. I believe this recipe is one of those uses, if I do say so myself!
A tropical blend of coconut, avocado, and lime with a WHOLE HEART of romaine lettuce, this sweet treat is perfect for a poolside afternoon with a book and a big hat. It’s refreshing yet filling, delicious and nutritious. A bit of the rind is included to give the drink an extra zing of lime-y flavor and an extra punch of micronutrients and healthy citrus oils. With great age-fighting antioxidants for skin health, lime rinds can even be applied right to your face to help with hyperpigmentation!
Coconut Lime Fancy Fresh Smoothie
- Juice of 1 lime
- ¼ lime rind
- ¼ avocado
- 1 whole heart of romaine
- Coconut Milk
- Coconut water
- Maple syrup (about 1/2 a tablespoon or to taste)
