My apologies for being absentee on the blog last week. It was a hectic one for me, and I just couldn’t make it happen. Sometimes in life, it’s important to weigh the options — push and push until you make yourself sick or stress yourself into injury, or simply let something fall behind. I chose the latter last week. Sometimes the things we perceive as life or death aren’t, and at the end of the day, our own sanity should win out.
Now, onto this delicious, nutritious, holiday powerhouse smoothie! I LOVE peppermint bark. My two big weaknesses during the holiday season (well there are probably more than two) are moose tracks popcorn and dark chocolate peppermint bark. It’s just too good! There’s the bittersweet chocolate and the candy cane crunch, and then the white chocolate that the candy cane is set in… DIVINE! But admittedly full of sugar.
This smoothie takes the joy of peppermint bark and blends it with some veggies to turn it into something actively healthy and very delicious. You get your 1 or 2 servings of veggies, your health fats and proteins from the nuts (for more protein, you could add some gelatin like this – we’ll do a post on the benefits of gelatin later), your antioxidants from the raw cacao or unsweetened cocoa, and you’re good to go for a nice, healthy, balanced meal! Peppermint Bark Smoothie
- Two fistfuls spinach
- Handful almonds or pecans (or some of both!)
- 6 or 7 mint leaves
- 1 date
- ½ banana
- 1-2 heaping spoonful unsweetened organic cocoa (depending on how chocolate-y you want it)
- ¼ tsp peppermint extract
- ¼ vanilla extract
- Pinch of stevia (optional)
- Unsweetened vanilla almond milk
- Coconut water
Blend, and bask in the glory of liquid peppermint bark!
