Happy Monday! In celebration of fall and National Diabetes Awareness Month, we’re sharing a Monday morning smoothie recipe. Our Wednesday recipes for the month of November will be winning diabetes-friendly recipes submitted by our awesome AHS team. More on that on Wednesday. I wanted to be sure and get this posted now that fall is in full-swing. (This recipe is also diabetes-friendly!)
The second week in October, AHS recognized our amazing Emergency Department nurses with a week of appreciation. As part of the fun, Passport to a Healthy Me! brought smoothies to the ER conference room that celebrated the season. The favorite of the bunch was a variation of this one, the Pumpkin Pie Smoothie. It combines all the deliciousness of pumpkin pie with a few extras to add to the nutrition profile (including lots of fiber) and promises to fill you up for breakfast or lunch. It’s also full of yummy spices that warm the senses for this wonderful drop in temperature that indicates fall has begun.
We bring smoothies to the ED each year over and above our hospital-wide smoothie club for a few reasons:
- To show the nurses and docs how much we appreciate them
- To give them samples and recipes so that they might try them at home
- To provide them with something they can actually use — a nutrition powerhouse that tastes great and can be consumed on the go, as folks in the ED are often running and rushing, sometimes to the detriment of their food choices
I was happy to hear, after talking with some of our nurses, that a good number of folks in our ED acknowledge the toll a job like this can take on their health, and that they are in fact very health-conscious and do a great job taking care of themselves. Way to go, Highland ED!
As a side note before we get to this awesome recipe, I wanted to plug an amazing documentary about the Highland Emergency Room called The Waiting Room.
This documentary took the film festivals by storm last year winning three awards and raising enough money through Kickstarter to be screened nationwide. I encourage you to see this remarkably honest film, which depicts a “day in the life” of the folks in the Emergency Room of a publicly funded hospital, both the patients and the staff.
Now on to tastier topics!
Pumpkin Pie Smoothie
- ½ canned organic plain pumpkin (not pumpkin pie mix)
- ½ banana (optional)
- Handful organic walnuts
- 1 tsp pumpkin spice (nutmeg, cinnamon, clove, ginger, allspice)
- fistful romaine lettuce (optional)
- splash of carrot juice (optional)
- ½ tsp vanilla extract
- 1 date
- Pinch of stevia
- Unsweetened vanilla almond milk
- Coconut water
The optional ingredients are there to beef up the drink by adding in some greens, some extra fiber, and some beta carotene (and more orange color!). Feel free to experiment with it to figure out which way you like it best. I used to do this one with raw eggs instead of nuts before I had to cut back my egg consumption, but as I’ve said in the past, unless you know where your eggs are coming from and can be sure they’re safe, stick to cooking them.
